WHAT ARE THE SCALES?
The scales are my food journal. In 1998, I started a low-carb diet. I
had reached 270 and was not happy. I lost 70 pounds in about 6 months.
Time has crept back on me and it's time to shed it again.
By keeping the food journal, I hold myself accountable to people
reading this. It keeps my goal in sight. Though, this time, I'm not
looking at it as a diet to lose weight, it's a lifetime plan.
WHAT DO YOU EAT?
A lot of what I eat is meat & green vegetables. I won't use this
space to explain why that this sort of eating is optimal for good
health. There is one site that
explains it all.
As you watch my scales, you'll notice much redundancy. I'm trying to
learn about more things I can eat. Gosh, the first time I did this, all
I ate was tunafish & greenbeans. It's a learning process. Basically,
it's mostly beef, pork, chicken & green vegetables.
IS THAT ALL YOU EAT?
I'm human. I need to snack. Everyone has snacked since they were
little. My snacking is changing. What you won't read on the scales is my
indulgences. Because, low-carb eating has taken off in recent years,
many companies have sprouted up to offer a wide range of low carb &
tasty foods.
My personal favorite low carb indulgences: Russell

Indulge Chocolates, Atikin's
Cruncher chips, Carbolite
Jelly Beans, Edy's
Whole Fruit Bars & Hershey's
Sugar-Free line..
WHAT DON'T YOU EAT
Heavy carb foods such as: potatoes, regular breads, regular candy bars,
sugars, milk, & "sweets" in general. In addition, I avoid caffiene
& aspartame (as it has been shown that they impede weight loss). I'm
also learning about the negative effects of nitrates & hydrogenated
oils.
HOW DO YOU FEEL?
I feel great! Because my job is "sit-down" work & heretofore I have
had a hard time exercising, I am a couch potato. Now, my body is
metaboling right. Since my sugar/carb intake is lowered, my blood sugar
stays more stable, I don't get tired as easily and can wake up with ease
in the morning. I feel like I'm 18 years old.
